Kabocha contains essential vitamins, nutrients and minerals and is an excellent source of beta-carotene which can be converted to vitamin A in the body. Vitamin A is important for healthy white blood cells, good immunity and for vibrant eyes, skin and hair.

Why a 5-carbon sweetener instead of a 6-carbon sweetener?

 

Pumpkin Sweet and Pumpkin Pure have 10 calories per teaspoon.  Cane sugar has 15 calories per teaspoon. However all calories are not the same. What is the difference? Cane sugar calories are high-glycemic, "bad calories".  Pumpkin Sweet and Pumpkin Pure are 5-carbon sweeteners, so their calories are low-glycemic, "good calories".

 

Most natural sweeteners fall under the Carbohydrates category of simple sugars. Each has a different effect on blood glucose. It is this response on blood glucose levels that is known as the Glycemic Index ("GI"). A GI above 75 is considered high, and foods below 50 have what is referred to as a low GI. Even when a 6-carbon sugar has a low GI, it will still cause a spike in blood sugar levels and possible weight gain. All fructose and glucose (6-carbon sugars) in the diet should be minimized, because they convert to glucose once inside the cell. In contrast, a 5-carbon sugar has a negligible effect on glycemic level.
